Kale is the epitome of healthy eating and in the spirit of Njaanuary we sought out various ways you can prepare sukuma wiki to make it a treat for you and your kiddos other than sautéing and juicing. INGREDIENTS 4 Tbsp. (60 ml) of oil 6 cups of finely chopped Sukuma Wiki 1Tbsp. curry powder 2 Tbsp. (30 ml) of coconut cream METHOD Heat the oil in a pan to very hot. Add the Sukuma Wiki (ensure it is well drained). Add your preferred spice on top and cover it. Steam on a medium heat for 5 minutes. Add curry powder, coconut cream and salt to taste. Stir and simmer for 5 more minutes. You can serve this with hot with Ugali and avocado. INGREDIENTS 2 bunches of kales 1 onion 2-3 cloves garlic 1 tablespoon vegetable oil or butter 1/2 teaspoon fine sea salt, plus more to taste 1 teaspoon ground ginger* 1/2 teaspoon ground turmeric (optional) METHOD Heat the oil in a medium pot to very hot. Add the onions, garlic, and salt and stir frequently, until the onion and garlic are softened and the onion is translucent about 3 minutes. Add the ginger, turmeric, and pepper and cook it for a minute or two and then add the greens, stir to combine, and reduce the heat to medium-low. Cook the greens, stirring them frequently, until they start to wilt. You can serve this with garlic rice and sliced tomatoes. While steaming and sautéing gets you a good amount nutrients from sukuma wiki, baking it will keep all the fiber and give you most of the vitamins. INGREDIENTS 1 bunch kale 1 to 2 teaspoons vegetable or olive oil Salt for sprinkling METHOD Preheat your oven to 150°C. Cut out and discard any large ribs from the centre of the leaves (these won’t crisp up the same way as the leaves will). If the leaves are small in size you can leave them whole but cut the larger ones so that they can bake evenly. Put them in a bowl and drizzle them with oil while gently tossing them so that they are fully coated in the grease. Arrange them in a single layer on a baking sheet (the secret for a good crisp is the single layer) and sprinkle in the salt. Bake the kale for 20 minutes, remove from the oven and let it cool. Note that the kales will not crisp while in the oven but as they cool so do not leave them in for any longer. Baking sukuma wiki allows it to stay fresh without refrigerating. A cookie jar will do, only store them in a dry place. Tip: Kale tastes better when it’s not left in the heat for too long and you can actually eat it raw in salads.
